THE BEST EVER CHEESECAKE
Serves 10-12

20 ozs cream cheese (2 1/2 - 8 oz pkgs)
1 3/4 cups granulated sugar
2 Tsp pure vanilla extract
3 eggs, at room temperature
3 Tbs cornstarch
1 pint heavy whipping cream
1/2 tsp salt
2 Tbs fresh lemon juice
Preheat oven to 350 degrees F.
Cream together cheese, sugar, and vanilla. Add eggs, one at a time. Mix well.
Add cornstarch, whipping cream and salt. Mix on high speed for 3 minutes. Add lemon juice.
Pour into prepared 10 inch crust in springform pan.
Bake 1 hour 15 minutes in a 350 degree oven.
Allow to cool in oven with door ajar for 1 hour.
Remove and cool on rack until cheesecake reaches room temperature.
Chill 12 hours before removing from pan. Top with desired fruit.

GRAHAM CRACKER CRUST
"This is a great graham cracker crust, not dry or crumbly. It's sweet, almost like caramel."
1 cup graham cracker crumbs
1/4 cup butter, melted
1/3 cup light brown sugar or white sugar, for less sweet crust
Preheat oven.
Mix ingredients together. Press onto bottom of pan.
Bake in a silver pan at 350 degrees F for 8-10 minutes, or in a dark pan at 300 degrees F for 8-10 minutes.
