Sugar Free Pumpkin Pie

1 baked and cooled 9” deep dish pie shell.

2 small packages of instant sugar free vanilla pudding.

2 cups of milk
(I like to use one can of evaporated milk for part of the milk.
I think that it gives it a richer taste.

I cup of canned pumpkin - Plain pumpkin not pumpkin pie mix.

I tsp. pumpkin pie spice

¼ teas. Of nutmeg

¼ teas. Ginger

½ teas of cinnamon.

Blend all of the ingredients in a blender, or mix with mixer until smooth.

Pour into prepared pie shell and chill until set.

Notes :

I used a graham cracker crust. I used one can of reduced fat evaporated milk

I added extra cinnamon and nutmeg & added some vanilla to the mixture.
