BANANAS 'N CREAM BUNDT CAKE

"This recipe was featured in the April '94 issue of Reminisce Magazine. My mother created it and won their cooking contest. She is no longer with us and I'm proud to pass it on to you.'

Makes 14 servings

2 cups all-purpose flour
1 1/4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup vegetable shortening
1 1/4 cups granulated sugar
2 eggs
1 tsp pure vanilla extract
1 1/4 cups mashed over ripe bananas
1 cup sour cream
3/4 cup chopped walnuts or pecans
confectioners' sugar for dusting

Preheat oven to 350 deg. F. Grease and flour a 10 inch Bundt pan.

In a bowl, mix together the flour, baking powder, baking soda and salt; set aside.

In a large mixing bowl, on medium mixer speed, cream the shortening and sugar.
Add the eggs, one at a time, beating well after each addition. Blend in vanilla.
Add bananas and mix well.
Add the flour mixture to the creamed mixture by thirds alternately with sour cream, stirring just until combined. Fold in nuts.
Pour into prepared pan. Bake for 50 minutes or until cake tests done.
Cool 10 minutes in pan before removing to a wire rack to cool completely.
Dust with confectioners' sugar before serving.

"Many folks like this cake with a glaze instead of dusting with powdered sugar, so here is a great recipe for that."

VANILLA GLAZE:
1 1/2 cups confectioners' sugar
1/8 tsp salt
Just enough milk for correct consistency, if necessary
1/4 tsp pure vanilla extract
1 Tbs butter
1 Tbs corn syrup

DIRECTIONS
Place confectioners sugar and salt in a small bowl. Melt the butter and add along with the rest of ingredients. Mix until creamy. Drizzle over completely cooled cake.

SUGGESTED OPTIONS BY OTHERS WHO MADE THE CAKE AND SAID IT WAS STILL AWESOME.

Chocolate chips
Cinnamon
Plain yogurt (regular or lo-fat) in place of sour cream
Half mashed bananas, half crushed strawberries
Splenda instead of sugar
3/4 cup brown sugar and 1/2 cup white sugar instead of all white sugar
Butter instead of shortening
Made as cupcakes
Baked in a 13x9 inch baking pan

Add 1/3 cup cocoa. Increase sugar to 1 3/4 cups.
