2 cups milk
4 Tbs butter
3/4 cup Ghirardelli Ground Chocolate
1/4 cup sugar
1/4 cup cornstarch
Pinch salt
3 egg yolks
1 tsp pure vanilla extract
1 (9 inch) baked pie shell
Meringue or whipped cream (for topping)
In top of double boiler, scald milk with butter.
Blend together Ground Chocolate, sugar, cornstarch, salt. With wire whip, mix chocolate into hot milk. Stir constantly for 5 minutes or until filling begins to thicken.
Add a small amount of hot filling to egg yolks; pour yolks into filling. Continue cooking, stirring until thick enough to hold a shape. Add vanilla.
Pour into pie shell. Cover with plastic wrap touching directly onto the surface to prevent the chocolate creating a film. Refrigerate.
Prepare meringue or use whipped cream for topping.
Can you use cocoa in place of the ground chocolate? I'm not sure what that is.
I researched this for you and I don't think cocoa would work as well.
This wonderful product includes both cocoa and ground chocolate, not just cocoa. It seems it may be a bit find to hard, but you can go to google and find where to buy it.
