Smoked Oysters

Smoked some oysters yesterday and boy were they good. Took a quart of oysters (with the liquor), mixed in a tsp of sea salt and let sit in the fridge over night. Got the smoker heated up to about 250F with it smoking real good then added the oysters to a foil lined rack. Let smoke for about 1.5 hours turning once. Used apple and alder wood for the smoke.

I've smoked oysters before but didn't like the results. I think the difference this time was I let the rack heat up in the smoker and added the oysters to it when it was hot. Also I waited for the smoker to come up to temp first. I also poke holes in the foil to give the liquid a way to excape so they dry some as they cook.
