Zucchini Bread
Zucchini Bread
Combine & Blend well:
1 C. Salad oil
3 Eggs, slightly beaten
2 C. Sugar
2 C. Grated raw zucchini (about 2 Med. Size)
2 Tsp. Vanilla
Mix together:
3 C. All-purpose flour
1 Tsp. Soda
¼ Tsp. Baking powder
3 Tsp. Cinnamon
Stir in - do not beat
Stir in:
1 C. Chopped nuts
Spoon into 2 well greased loaf pans
Bake 325 deg. for 1 ½ hr or until done
(I cook for 1 hr then test with toothpick for doneness)
