Pineapple Salsa

Lighter dishes are a big part of our summer fare. This pineapple salsa is delicious with grilled fish, chicken, or a spicy Mexican dish. I made it this week to accompany grilled salmon. It only take a few minutes to prepare.

Pineapple Salsa

1 1/2 cups chopped fresh pineapple
1 Tablespoon fresh lime juice
1 Tablespoon sugar
1 Teaspoon minced fresh, peeled ginger

Mix together, cover, and chill for 1 hour. enjoy.

You could add more ginger and it would enhance the salsa.

Speaking of ginger: the spice shop near my home sells candied ginger dipped in dark chocolate. It is so good it would bring tears to your eyes. You could probably make it at home if you buy plain candied ginger, melt some high quality dark or bittersweet chocolate, and dip the ginger in it.

I am very good that I only will eat a tiny tiny amount of candy
so I can have a piece usually only on a holiday
