Mother's Welsh Rarebit Recipe...

My mother made her version of a Welsh Rarebit, served on toast. Easy luncheon dish with a side salad, a meal.

Ingredients:
1 can Campbell's Tomato Soup, undiluted from the can
3 to 4 ozs. shredded cheddar cheese (we use sharp or X sharp)
1 tsp to 1 Tbsp worchestershire sauce
splash of hot sauce (optional)
pinch of black pepper and onion powder (optional)
May need an ounce or so of milk or 1/2 'n 1/2 to thin

Combine all ingredients in a small saucepan and heat until cheese is melted and well blended. Serve on toast points.

I love Rarebit Sauce but the one I grew up with didn't have tomato soup but it sounds like an interesting twist. In my family it sometimes was poured over hamburgers which with a extra splash of worchestershire sauce was my favorite use of the sauce.

Since my Dad was a meat-cutter we seldom got burgers as kids so when we did they were usually kicked up in some way. I was so tired of steaks & roasts.....little did I know until I was out on my own ....surprise! But since Dad could bring home anything that was going to be ground for hamburger prices he brought home the better cuts that had been in the case a day or two & were scheduled for the grinder....all those packages marked ground beef & almost nothing was.....LOL

I should really research a true "Welsh" rarebit recipe. I am sure my mother's was totally different for the original version. She was a good cook, very inventive for the 1950-60s, watched a lot of TV chefs, especially Julia Child and from Phila., PA, Florence Hanford, Phila. Elec. TV Chef. She was master of the caserole dish and soups, stews and sauces.
