What Are Your Favorite Vegetable Recipes

I KNOW I need to eat more veges but there's not much (besides the starchy ones) that excite me. I had great plans for Broccoli but can't eat it any longer due to medication I'm taking. I love the prepackaged mashed butternut squash but it can be expensive. Recently, I've been into cucumbers with lite ranch dressing. Any suggestions as to how to get more delicious vege recipes into my diet?

Hi everyone just joined this group but I am an active member of Weight Watchers and am always looking for additional support wherever I can get it.

I just wanted to share with you a dish for the summer which I find delicious:
Cucumber salad:

1 European Cucumber or pick a cucumber that you think will have the smallest amount of seeds.

Chop the cucumbers into slices or cubes ( I prefer slices )
Mix in 1 small container of Greek plain fat free yogurt
Dill a small amount finely chopped
Salt and Pepper to taste
1 bunch of green onions fine chopped
Any other seasoning that makes your palate happy

Refriegerate and eat on a hot day and you will be surprised at how cool and light it is and tasty

Thanks VINTAGE...and WELCOME! I just discovered I love cucumbers with lite ranch dressing and a half pack of Equal and a little pepper. Funny, I've never been a "Ranch" person and suddenly I got this idea. I'd always preferred low fat Thousand Island or Russian and now Kens Honey Mustard spritzer. I'll have to try this now.

Thanks for the welcome Diva...you may find that using the greek yogurt is a great alternative when making your own dressings because it is very thick and you can buy fat free or 2% or full fat which is still doable when you want to splurge on yourself. I live in a gReek neighborhood and I get to eat a lot of Greek specialties which are basically delicious in a very organic way.

VINTAGE....don't think I've ever seen Greek yogurt. Do supermarkets carry it you think?

My husband makes me a green bean recipe that I love. First, he steams the beans in a little bit of water in the microwave. Then he lightly dusts a frying pan with olive oil, and sears the beans in the olive oil along with lots of garlic. Add salt and pepper.

He also has a wonderful recipe for quiche that's primarily veggies. I'll see if I can find that for you...
