What Are Your Favorite Vegetable Recipes

I KNOW I need to eat more veges but there's not much (besides the starchy ones) that excite me. I had great plans for Broccoli but can't eat it any longer due to medication I'm taking. I love the prepackaged mashed butternut squash but it can be expensive. Recently, I've been into cucumbers with lite ranch dressing. Any suggestions as to how to get more delicious vege recipes into my diet?

My Mom is in the same boat with not being able to eat broccoli - and other vegetables that are high in vitamin K. I eat tons of veggies. I like raw veggies of all kinds. I use bagged frozen mixes in my cooking all the time. I love peeled and sliced cucumbers with no dip, just enjoying the flavor. Jicama is a fun choice, sliced raw. I also will slice rutabaga and turnip into sticks and eat them raw. I use lots of onions, green pepper, garlic and tomatoes. Zucchini and yellow squashes are good raw or cooked and will absorb other flavors in your dish. Cabbage is great raw, in cole slaw and wonderful cooked. Try steaming and light cooking for different variations of flavor and texture. Also, you get more vitamins by light cooking and leaving on peels. I try not to use too much head lettuce, but more romaine and other lettuces, including baby spinach. I add things like black olives and fried noodles (in small quantities) to add variation to salads. I like to make a salad with refried beans, turkey chili, cheese, lettuce, tomatoe, onion, black olives and taco sauce. Don't forget asparagus, spinach, okra and beets. Try spritzing vegetables with zero point spray butter, seasoning with garlic powder, paprika or black pepper.

MJOY...Thanks. I'm not a lettuce eater anyway and I can't have spinach either. I mostly steam everything now and am not opposed to stir frying sometimes. I use nonstick spray, olive oil or ICBINB spray. I find the ICBINB adds a little salty flavor although the bottle says it doesn't contain sodium. I don't know what Jicama is although I've heard of it before. What's it most like? Taste, consistency?

Jicama - consistency like a hard pear, taste is sort of peppery. I guess that is the best way I know how to describe it!

I love veggies. Never did until i joined WW. I usually take an onion, 2 minced cloves of garlic sauteed in EVOO, add a large can of crushed tomatoes, sliced zucchini, sliced mushrooms,sliced up cauliflower & broccoli add some Mrs. Dash's seasonings and low sodium chicken broth; ccok it until the veggies are crispy but soft.You can add some cooked pieces of chicken and serve it over cooked brown rice or over cooked wheat pasta.

I take fresh cut up yellow squash and sliced onions sprinkled with Adobo. Put in a microwave dish with a cover and cook until done or soft to you liking. Also I make fresh green beans in a crock pot with two Knorr chicken bouillon cubes and sliced onion and about an hour before it is done I add fresh red potatoes from the garden and of course season to suit your taste. I use pepper, the bullion adds a lot of flavor. You can use your ww books to count your points.

PURPLEROSE...THANKS but can't use two boullion cubes...too much sodium. I use I Can't Believe It's Not Butter spray which tastes salty but has no sodium. Also, I do like cooking my green beans with onions, have to try it with the squash now.
