Swiss Gruyere

SG has reviewed one of my favorites and one that is used extensively in holiday cooking, Gruyere:

I like to use Gruyere to make a sandwich the French call a Croque Monsieur. It's a grilled ham sandwich, to which a slice (or shredded) gruyere is added on top. The sandwich is then placed under the broiler briefly until the cheeses bubbles and browns slightly.
