Coconut Almond Bars

I'm wondering if I can take this recipe, using a brownie mix ..........and substitute Butter for the Oil in the brownie layer.

Here is the recipe:
Coconut Almond Bars

Brownie Layer:
1/4 C Water
1/3 C Vegetable Oil
1 Egg
1 package Ghirardelli Ultimate Fudge Brownie Mix

Coconut Almond Layer:
1/2 C Butter, softened
1 C Powdered Sugar
2-3 T Milk
1/2 C Toasted Almonds
1/2 C. Flaked Coconut

Ganache Layer:

1 pouch Fudge Topping (enclosed in the mix)

Preheat oven 325 degree F

For BROWNIE Layer:
In medium bowl, blend together water, oil, egg and brownie mix, until moistened (about 40 strokes)
Spoon batter into lightly greased 8x8 " pan.
Bake 39-43 minutes.
Let brownies cool completely.

For COCONUT ALMOND layer:
Place butter and powdered sugar in medium bowl.
Using an electric mixer mix on low speed 1 to 1 1/2 minutes or til blended.
Add milk and mix on medium speed 2 minutes or til light and fluffy.
Fold in toasted almonds and coconut. Spread onto cooled brownie.

For GANACHE Layer:
Warm fudge topping by placing unopened pouch in a cup filled with hot tap water for 4- minutes.
Remove from water and squeeze pouch 4-5 times to soften topping.
Cut top off topping pouch and squeeze onto coconut almond layer.
Spread gently to cover coconut layer.

Makes 16, 2 inch bars.

If it were me UpNorth, I would not omit the oil and substitute butter for it. Because it will change the texture of it when using a mix. You can possibly buy a brownie mix that is butter flavored or you can try to find a recipe online that would use part butter and oil.

I think the oil is what gives brownies their unique fudgy texture. I would not substitute butter. When butter is used in cookies, it makes them crispier and browner than those made with oil or shortening. If you really want to use butter I would suggest perhaps clarifying it first. I don't have any idea how that would turn out, but once clarified, butter is less likely to return to a completely solid state again.

if you melt the butter you should be OK doesn't the recipe already use a mix?

I just made this with the butter and melted it...cooled slightly and put in cupcake tins. I added some good quality fair trade chocolate to the tops. Very Good!
