RECIPES ON A BUDGET

"What with food prices being at an all time high we thought this was a much needed category. If you have a great low-cost recipe, please post it here. The more the better."

Farmer's Casserole

Serves 6
Source: Country Woman magazine

3 cups frozen shredded hash browns
3/4 cup shredded Monterey Jack cheese
1 cup diced fully cooked ham, or Canadian bacon
1/4 cup chopped green onions, or yellow onions
4 eggs
1 can (12 oz) evaporated milk (can use fat-free)
1 4 oz can chopped green chilies (opt)
Salt and pepper to taste

Place potatoes in an 8-in square baking dish. Sprinkle
with cheese, ham and onions. Beat eggs, milk, pepper, green chilies and salt; pour over all. Cover and refrigerate for
several hours or overnight. Remove from refrigerator
30 minutes before baking.
Bake, uncovered, at 350 deg F for 55-60 minutes, or until a knife inserted near the center comes out clean.

These all look great! And about the price of grated cheese, I think it's cheaper to buy a block of cheese and grate it yourself. I think the price for the bags of cheese have the convenience of not doing it built into the cost.

You're right Wyndswept, it's definitely cheaper to grate your own and it's much fresher that way, too.

This has been my family's favorite through the years using Banquets Frozen Chicken.

Banquet Chicken Casserole

1 box Banquet Frozen Chicken
½ Cup chopped onions
1 can sliced mushrooms
2 TBPS butter or margarine
1 can mushroom soup
2 Cups chicken stock (or bouillon cubes stock)
¼ tsp thyme

Sauté onions, mushrooms in margarine; stir in rest and simmer 25 minutes and serve with rice or noodles.

TACO BAKE CASSEROLE

Makes 6 one cup servings

1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1 lb ground beef
1 pkg. (1-1/4 oz.) Taco Seasoning Mix
3/4 cup sour Cream
1-1/2 cups shredded Cheddar Cheese, divided
1 cup Thick 'N Chunky Salsa

HEAT oven to 400°F.

Prepare Dinner as directed on package. While Macaroni is cooking, cook meat with taco seasoning as directed on package.

STIR sour cream into prepared Dinner; spoon 1/2 into 8-inch square baking dish. Top with layers of meat mixture, 1 cup cheese and remaining Dinner mixture; cover with foil.

BAKE 15 min.; top with salsa and remaining cheese. Bake, uncovered, 5 min. or until cheese is melted.

SAUSAGE AND TOMATO RIGATONI

Makes: 4 servings, about 2 cups each

4 cups (8 ozs) rigatoni pasta
1 lb. Italian sausage (your choice of the sweet, hot or mild), cut into chunks
1 red (or any kind you choose) onion, sliced
1/4 cup tomato paste
1/4 cup KRAFT Sun-Dried Tomato Dressing
1/4 cup chopped fresh parsley (opt)
1/4 cup KRAFT Grated Parmesan Cheese

COOK pasta as directed on package.

MEANWHILE, brown sausage in large nonstick skillet; drain. Stir in onions and tomato paste; cover. Cook 15 min., or until onions are tender and sausage is cooked through, stirring occasionally.
Stir in tomato dressing.

Toss sausage mixture with the cooked pasta. Sprinkle with parsley and cheese. Great served with garlic bread.

Cowboy Stew

This is something my mom used to make for us when we were kids, and I made it for mine. It's easy, cheap, quick and tastes pretty good too.

1 1/2 obs. ground beef
2 large cans baked beans (any type)
14 oz. can stewed tomatoes
small onion chopped
salt, pepper, garlic powder, chili powder to taste

Brown and drain beef, add beans, tomatoes, spices and onion. Let cook over low heat
for at least 30 minutes, stirring occasionally. This is like chili, the longer you let it go, the better it gets. But if you have hungry kids usually 30 minutes is about all you get.
Add a loaf of crusty bread and there you go.

CREAMED TUNA ROYALE
Makes 6 servings
Source: Riceland Rice Cook Book

2 Tbs butter or margarine
1/4 cup chopped green bell pepper
2 tsp minced onion
1 (3 oz) can sliced mushrooms, drained
1/4 cup all-purpose flour
1/4 tsp salt
Dash ground black pepper
1/4 tsp paprika
1 1/2 cups milk
1 (7 oz) can tuna (1 cup)
1/4 cup chopped pimento (opt)
1 tsp Worcestershire sauce
1 tsp lemon juice
4 cups buttered, hot cooked Rice (for serving)

Melt butter in skillet and green pepper, onions and mushrooms; cook until tender.
Stir in flour and seasonings; slowly add milk, stirring constantly until smooth and thick.
Add tuna and pimento. Heat to simmering and cook about 10 minutes.
Remove from heat and add Worcestershire sauce and lemon juice.

Serve on buttered, hot fluffy Rice.

MACARONI AND CHEESE LOAF

Makes 6-8 servings
Source: A Guide to Low Cost Cookery, Hunt-Wesson

1-1/2 cups elbow macaroni
1/2 cup milk
1-1/2 cups shredded Cheddar or mild process cheese
1/4 cup minced onion
1/4 cup minced green pepper
2 Tbs Wesson Oil
1/2 cup soft bread crumbs
2 cans (8 ozs each) or 1 (15 oz) can Hunt’s Tomato Sauce with Tomato Bits
3 eggs, well beaten
1/2 tsp salt

Preheat oven to 350 deg. F. Oil a 10x5 inch loaf pan.

Cook macaroni in boiling, salted water; drain.
Add the milk and cheese; stir over low heat until cheese melts and mixture is smooth.
Meanwhile, in skillet cook onion and green pepper in Wesson Oil until soft; stir in bread crumbs.
Stir crumb mixture into macaroni; mix in 1-1/2 cups sauce, eggs and salt.
Spoon into loaf pan.

Bake for 50-55 minutes, or until set. Let stand 10 minutes; invert on serving platter.
Heat remaining sauce; serve over loaf.
