Hi everyone,just stoped by to say I'm still around and kicking. Haven't been on the net much this summer. Either to busy or just to tired at the end of my day. Sure do enjoy the cooler days now summer is about over. Canning and garden weeding will soon be over too. Well it's time for bedy bye so good night all.

It's that time of year: Apple Crisp!!
I was at a friend's house on Saturday and was invited to pick some apples. Here's what I did with them:

I'll eat one over the next couple of days, and freeze the other.
The recipe couldn't be easier:
Filling:
Apples, cored and thinly sliced (I don't peel mine) -- enough to nearly fill whatever pan(s) you decide to use. I used about 5-6 cups of apples for the two small dishes here (one is about 6" x 9", the other is about 6" in diameter). This amount of apples should work well for an 8" or 9" square or round pan.
Lemon juice -- about 1 Tbsp total, sprinkled over apples as you slice 'em, to keep 'em from turning brown
1/2 C sugar
2 tsp cinnamon
Toss apples with cinnamon & sugar
Topping:
1 1/4 C all-purpose flour
1 C quick-cooking oatmeal (from the cardboard cannister)
1 C (packed) brown sugar
1/2 C butter, melted in the microwave
1/4 C chopped pecans
Mix dry ingredients first, then add melted butter and toss until crumbly. You may need to add a little extra flour, but that's OK
Spoon apples into lightly greased pan(s) (I just used butter); top with crumbly mixture.
Bake at 350 for about 40-45 minutes, until top is lightly browned and filling is bubbly.
Cool and serve with ice cream, whipped topping, whipped cream, or naked. Personally, I like cinnamon whipped cream with mine.
